Ingredients

Chicken & Masala

  • Chicken (bone-in) 1 kg, curry cuts
  • Yogurt 1 cup (whisked)
  • Ginger garlic paste 2 tbsp
  • Green chilies 4–6 (slit)
  • Fresh mint ½ cup, coriander ½ cup (chopped)
  • Lemon juice 2 tbsp
  • Oil ¼ cup + ghee 2 tbsp
  • Onions 3 medium (≈350 g), thin sliced
  • Tomatoes 2 medium, chopped

Whole Spices

  • Bay leaves 2
  • Black cardamom 2
  • Green cardamom 6
  • Cloves 6
  • Cinnamon 1 inch
  • Cumin seeds 1 tsp

Rice

  • Basmati rice 750 g (soaked 30 min)

Rice Boil Spices

  • Salt 2 tbsp (apne taste ke mutabiq)
  • Optional: bay leaf, cloves, cardamom for boiling pot

Garnish / Color

  • Saffron pinch in ¼ cup warm milk (ya ½ tsp food color in 2 tbsp milk)
  • Fried onions ½ cup
  • Ghee 2 tbsp

Method

  1. Rice 30 min soak karo. Pani ubalo, namak + optional whole spices daalo, rice ko 80% tak boil karke drain kar do.
  2. Degchi me oil + ghee garam karo. Onions golden fry karo, aadhi nikaal ke garnish ke liye rakh do.
  3. Remaining onions me ginger-garlic, tomatoes aur powdered spices daal ke bhunai karo.
  4. Chicken add karke high heat par sear; phir yogurt, green chilies, mint & coriander daal do. Oil separate hone tak bhuno.
  5. Layering: Half rice, phir chicken masala, phir baqi rice. Upar saffron milk/food color, ghee, fried onions.
  6. Dum: Tight lid, low flame 20–25 min. 10 min rest, phir gently mix karke serve.

Notes

  • Rice ko 80% tak hi boil rakho—dana beech se halka kachcha ho.
  • Boil water thoda zyada namkeed ho to final salt perfect rehta hai.
  • Dum ke liye neeche tawa rakh do to bottom burn nahi hota.
  • Aroma pasand ho to end me 1 tsp kewra.
